Bacon Cheeseburger Soup

Ingredients
- (3) Hamburger buns
- (4 slices) Bacon
- (1 Tbsp) Olive Oil
- (1 lb) Ground Beef
- (1/4 cup) Butter
- (2 cloves, minced) Garlic
- (diced) Onion
- (2 stalks | diced) Celery
- (2 carrots | diced) Carrots
- (1 teaspoon) Wocestershire
- (3 Tbsp) All-purpose flour
- (2 1/2 cups) Chicken broth
- (2 cups | more as-needed) Milk
- (2 potatoes | diced) Russet Potatoes
- (1 1/2 cups) Shredded Cheddar Cheese
- (to taste) Salt & Pepper
- (2 Tbsp | chopped) Chives
Directions
- Pre-heat oven to 400, on a sheet pan, spread bread cubes, place in oven for 10-15 mins until crisp and golden. Set aside.
- Heat large skillet over med-high heat, brown bacon for 6-8 minutes, set aside.
- Heat stock pot over med-high heat, brown ground beef 3-5 mins, drain.
- Melt butter over medium heat, add veggies, and Worcestershire. Cook for 2-3 minutes.
- Whisk in flour until lightly browned, about 1 minute. Slowly add chicken broth and milk until thickened, about 1-2 mins. Add in potatoes. Bring to boil; reduced heat and simmer until potatoes are tender, about 12-15 minutes. Stir in ground beef, cheese, salt, pepper to taste. Serve with bacon, chives, and burger bun croutons as garnish.
