Bacon Cheeseburger Soup

Ingredients

  • (3) Hamburger buns
  • (4 slices) Bacon
  • (1 Tbsp) Olive Oil
  • (1 lb) Ground Beef
  • (1/4 cup) Butter
  • (2 cloves, minced) Garlic
  • (diced) Onion
  • (2 stalks | diced) Celery
  • (2 carrots | diced) Carrots
  • (1 teaspoon) Wocestershire
  • (3 Tbsp) All-purpose flour
  • (2 1/2 cups) Chicken broth
  • (2 cups | more as-needed) Milk
  • (2 potatoes | diced) Russet Potatoes
  • (1 1/2 cups) Shredded Cheddar Cheese
  • (to taste) Salt & Pepper
  • (2 Tbsp | chopped) Chives

Directions

  1. Pre-heat oven to 400, on a sheet pan, spread bread cubes, place in oven for 10-15 mins until crisp and golden.  Set aside.
  2. Heat large skillet over med-high heat, brown bacon for 6-8 minutes, set aside.
  3. Heat stock pot over med-high heat, brown ground beef 3-5 mins, drain.
  4. Melt butter over medium heat, add veggies, and Worcestershire.  Cook for 2-3 minutes.
  5. Whisk in flour until lightly browned, about 1 minute. Slowly add chicken broth and milk until thickened, about 1-2 mins.  Add in potatoes.  Bring to boil; reduced heat and simmer until potatoes are tender, about 12-15 minutes.  Stir in ground beef, cheese, salt, pepper to taste.  Serve with bacon, chives, and burger bun croutons as garnish.
