Balsamic Fig Pork Chops

Balsamic Fig Pork Chops

Ingredients

  • (1) Broccoli head, cut into pieces
  • (1/4 head) Shredded cabbage
  • (4-5) Dried figs, chopped
  • (4 oz) Ricotta cheese
  • (1 tsp) Italian seasoning blend
  • (1/2 tsp) Red pepper flakes (optional)
  • (1/2 oz) Pine nuts
  • (2 (5-6 oz)) Pork chops
  • (3/4 oz) Balsamic vinegar
  • (1 oz) Parmesan cheese

Directions

  1. Pre-heat oven to 400, on a sheet pan, place broccoli cuts and shredded cabbage, drizzle with olive oil, salt, and pepper.  Roast 14-16 minutes until tender.  Sprinkle with parmesan cheese and return to oven for 2-3 minutes longer.
  2. Place ricotta cheese, half of the Italian seasoning, 1 Tbsp of olive oil in a small bowl, stir to combine.  Add salt, pepper, and red pepper flakes (or omit) to taste.
  3. Place pine nuts in a dry sauté pan over medium heat.  Toast 2-3 minutes until fragrant.  Remove to cool and roughly chop.
  4. Season pork chops with remaining Italian seasoning, salt, pepper.  Heat about 1 Tbsp of olive oil in pan on medium-high heat.  Cook pork 4-5 minutes on each side until fully cooked, transfer to cutting board to rest 3 minutes.
  5. Use pan for pork chops to make fig sauce.  Add figs, balsamic vinegar, and 2 Tbsp of water to hot pan, season with salt and pepper.  Cook 2-3 minutes until reduced.  Remove from heat, add 2 Tbsp of butter.  Stir until melted.
  6. Plate pork on top of Ricotta cheese blend, drizzle fig sauce on top.  Serve veggies on side, garnish with toasted pine nuts.
