Ingredients
- (4-6) Pastured eggs
- (1) Green Bell Pepper, diced
- (1) Medium onion, diced
- (1) Large Sweet Potato, diced
- (1/2 lb) Breakfast sausage, crumbled and cooked
- (1/4 cup) Cilantro, chopped
- (1) Small Avocado, sliced or diced
- (1/2 to 1 tsp) Cajun seasoning
- (2 Tbsp) Butter
- (2 Tbsp) Olive Oil
- (to taste) Salt & Pepper
- (1/4 cup) Shredded cheddar cheese
- (4-6) Corn or Flour tortillas
Directions
- Pre-heat oven to 400, on a sheet pan, spread diced sweet potato evenly, drizzle with olive oil, sprinkle with Cajun seasoning, stir. Roast in oven for 25-30 minutes until potatoes are soft. Set aside.
- Scramble and cook eggs, set aside. Crumble and cook sausage, set aside. On medium-high heat, melt butter, add veggies and sweat for 5 minutes until veggies are soft.
- Add sweet potato, sausage, and eggs to the pan with veggies, stir until heated through.
- Serve in warmed tortillas, top with avocado, cheese, and cilantro. Serve and enjoy!
