Ingredients
- (8 slices) Kunekune Pork Thick-Cut Bacon, Smoked and Cured | Pasture-Raised, Heritage Breed | Flavor Perfection
- (8 Slices) Kunekune Pork Thin-Sliced Bacon, Smoked and Cured | Pasture-Raised| Savory Heritage Pork
- (Sliced into 8 slices, or use as a marinade on whole cut) Kunekune Pork Belly| Regeneratively Raised on Texas Pastures | Meat Candy for the Smoker
- (1 Cup) Brown Sugar
- (1 Tbsp) Black Pepper
- (1 tsp) Cayenne Pepper
- (1/2 cup) Maple Syrup
- (1/2 cup) Water
- (1/8 cup) Kosher Salt (optional, only if using to marinate whole belly cut that isn't cured already)
Directions
Whisk all ingredients together in large bowl, set aside.
Preheat oven to 325 degrees. Place a roasting rack on a sheet pan lined with parchment paper. Drag bacon slices through glaze mixture and place on prepared sheet pan. Bake for 10-15 minutes. Rotate pan and cook for another 2-5 minutes (adjust for thickness of bacon slices). Serve.
As a Marinade
Whisk all ingredients together, set aside. Prep a vacuum sealer bag or large plastic Ziplock bag for your pork belly. Add marinade mixture. If using vacuum sealer, chill in the fridge to marinate for 12-24 hours. If using a plastic bag, be sure to turn your bag once per day, up to 3 days.
Prep smoker for 175 degrees. Rinse cut completely with water. Place belly directly on rack with a drip pan underneath. Use a meat thermometer to monitor internal temperature and remove once it reaches 150 degrees (about 4-6 hours). Return to fridge to chill. Once cooled completely, slice into bacon. Cook like regular bacon on the skillet or in the oven.
